Norma Mahabir’s Spice Cake

Norma Mahabir, who emigrated from the Caribbean to Canada, often brought her moist, flavorful spice cake to our church for tea and talk after the service. I loved it so much that I asked for the recipe, and I have made it many times since. It freezes well, but is best fresh. No frosting needed! Divine when eaten warm with a scoop of vanilla ice cream.
Spice Cake Recipe
(makes 2 loaf-pan-sized cakes)
Ingredients
- 1 cup margarine, melted
- 1 cup sugar
- 1 cup molasses
- 1 tsp. each: cinnamon, cloves, ginger
- 3 eggs
- 2 tsp. baking soda
- 2 Tbsp. hot water
- 2 cups sifted flour
- 1 cup boiling water
Instructions
- Preheat oven to 350°F and prepare your loaf pans (either grease and flour them, or line with parchment paper).
- Combine melted margarine, sugar, molasses, spices, and eggs. Beat well.
- Dissolve baking soda in the hot water, and stir it into the batter.
- Add the flour to the batter, beat well. Add the boiling water to the batter, blend it in.
- Pour the batter into the loaf pans and bake for 45 minutes, or until a toothpick comes out clean. Let cool for a few minutes (or fully) before removing from pans. Slice and enjoy!
